	Abstract: L’Italie et la France appartiennent toutes deux au monde dit ‘occidental’ et‘développé’. Elles sont voisines et l’on dit leurs cultures proches. La cuisine de l’une, la France,ne provient–elle pas de l’autre, l’Italie, en ce siècle où la France importa hommes politiques,artistes et cuisiniers ? Certes ! Pourtant les différences culturelles sont réelles même si elles nesont pas de celles qui sautent aux yeux.
