Abstract: Researches Concerning the Preparation of Plasmolysates from Cells of the Beer Yeast Saccharomyces carlsbergensis. Plasmolysates were prepared from cells of the beer yeast S.carlsbergensis by using sucrose and sodium chloride as plasmolytic agents in concentration of 15 and 25% relative to dry weight of yeast cells. In comparison with the supernatant on the sedimented nonplasmolysed yeast cells,the plasmolysates contain more total ash, total nitrogen, crude protein and fat and less carbohydrates. The most evident increase was registered in the crude protein content. The plasmolysates obtained are recommended as additives to some foodstuffs for improving their flavour as well as their amino acid and vitamin contents, whereas the sedimented plasmolysed yeast cells are considered useful as fodder additives. | |||||||
